New Zealand Christmas Salad


It's that time of year! The time of year when I share some christmas recipes with you.

Now in the past I have tended to share recipes on the sweet side, possibly because they tend to be a little more exciting to me. However, I thought that this year I would share at least one savoury recipe. I have called this a New Zealand Christmas salad for a couple of reasons 1) As christmas in New Zealand is in summertime, a salad fits really well, 2) it makes the most of a great New Zealand meat, lamb and 3) It also uses strawberries which are in abundance at this time of year.

Unfortunately, if you live in the Northern Hemisphere you may just have to bookmark this for a few months

Hopefully I will post up 3 or 4 more Christmas recipes before the day itself, so watch this space.

Serves 4 as a side or 2-3 as a main with bread

Ingredients
500g lamb strips or some leftover shredded roast lamb
1 cup slices strawberries
50g mild blue cheese (optional)
1/2 cup roast hazelnuts, roughly chopped
4 cups mixed salad leaves
1 carrot

Dressing
1/2 cup olive oil
2 Tbsp balsamic vinegar
Juice of 1 lemon
1 tsp brown sugar
1 tsp dijon mustard

Using a vegetable peeler, peel the carrot into long strips. In a large bowl layer 1/2 of the carrot and all of the other ingredients, then layer the other half.

In a large jar mix the dressing ingredients and shake well. Dress the salad with as much dressing as you like and keep the rest in the fridge.

Enjoy with some crusty bread
