Fruit and Nut Truffles
Here is something a little bit healthier for Christmas. Ok Ok I know, Christmas is the perfect excuse to indulge, but I promise that these truffles still taste indulgent. They are also great on a platter among more decadent treats.
These truffles are also extremely easy to make. All that you need is a good food processor or stick blender to prepare the mixture for you. I don't think that they could have taken me any more than 15 minutes and I am going to put them into a gift box of treats.

Ingredients
1 cup chopped, pitted dates
1 cup peanut butter
1 cup cocoa
1/3 cup honey
70g ground almonds or hazelnuts
1. Using a stick blender or food processor, blend dates, peanut butter, cocoa and honey.
2. Roll heaped teaspoons of mixture into balls.
3. Spread the almond or hazelnut meal on a plate.
4. Roll truffles in the meal until no longer sticky
