Christmas Breakfast Idea- Apple and Cranberry Rice Cooker Porridge
First of all I would like to apologise. Despite my best intentions, I haven't been able to post more. Between starting a summer research job and packing up all of our stuff to move out of our flat I just didn't find the time. However...... to make up for that my aim is to post a festive recipe every day this week.
So to kick it all off, here is a tasty and easy breakfast recipe. Now I don't know about you, but christmas can be pretty chaotic in our kitchen. This year my family is doing things a little more simply. There won't be any big spreads as I will be having Christmas camping-style with hungry male's family and my family are doing a pot luck style finger food lunch with friends.
If you are having a big Christmas dinner, its always nice to have something extremely easy for breakfast to take the pressure off and this recipe is perfect for that. Everything gets thrown into a rice cooker and cooks away while you prepare your turkey, ham or whatever it is you are happy. If you want to make this breakfast special, it is really all about the toppings. Get some delux nuts, yoghurt covered raisins and good quality yoghurt and create a toppings line so that people can customise their own.
This recipe serves 2 but can easily be doubled or tripled (the only restriction is the size of your rice cooker)

Ingredients
1 cup rolled oats
1 apple, cored and diced into 1cm pieces
1 cup cranberry juice
3/4 cup milk
1/2 tsp cinnamon
Toppings of your choice
1. Place the rolled oats, diced apple, juice, milk and cinnamon in the bowl of a rice cooker.
2. Switch on to the cook setting (white rice setting if it has one) and leave to cook.
3. Serve with desired toppings
